John’s Famous Homemade Corned Beef Just in Time for St. Patrick’s Day

Corned beef is made from the brisket, which is located just above a steer’s front legs.  The term "corned" comes from the salt corns that were used to cure the meat.  Ironically, few people in Ireland consumed corned beef, most likely because for much of its history Ireland was a poor country.

While it was prohibitively expensive for the Irish in their native land, when they came to America, corned beef was less expensive and more readily available.  Over the years, it has become a staple of St. Patrick's Day celebrations.

At John's Meat Market, we cure the beef in brine for about a week. Always a popular item this time of year, we begin taking orders weeks before St. Patrick's Day (March 17th) to make sure that it is available to our customers.  We use only U.S. prime beef and age and cure it ourselves to ensure the best quality and flavor.

John Losavio opened the doors of John's Meat Market on April 17, 1939.   The business is now run by his sons, Vincent, Nicholas, and Vincent, Jr., who continue the tradition of providing the highest quality U.S. prime meats.  After 75 years in business, John’s Meat Market has a well earned reputation for fine meats and has repeatedly been recognized as the top butcher in the state by New Jersey magazine.

Traditional Corned Beef and Cabbage Recipe

  1. Put corned beef in large pot filled with water.  Cover pot and bring to a boil, then reduce to a simmer. Simmer for about 50 minutes per pound (or until tender).
  2. Add potatoes and carrots, and cook until almost tender.
  3. Add cabbage and cook for about 15 minutes.
  4. Remove meat and let cool for 15 minutes.
  5. Slice corned beef across the grain.
  6. Place meat and vegetables in a bowl and serve.
