BERKELEY HEIGHTS, NJ - A new bakery is in town.
Owner Karen Campos of Karen’s Cookies on Springfield Avenue said the response of Berkeley Heights residents has been huge.
“They’ve absolutely just embraced me,” Campos said. “The neighborhood, the store owners around me. The response has just been fabulous.”
Her inspiration for baking started at a young age, Campos said.
“I’ve baked for as long as I can remember,” Campos said. “I was little in my mom’s kitchen baking. My aunt’s a chef and my grandmother baked. I think it’s just in my blood.”
Campos said she started off with baking cookies as a stay-at-home mom and realized the cookies were something special with neighbors and friends.
However, Karen’s Cookies sells more than just cookies. Cakes, cupcakes, cake pops and many other treats are available for purchase.
Campos said she also customizes and does special orders.
“Almost everything is customized in fact,” Campos said. “Someone comes and says I want this kind of birthday cake. I want it to say this or that…I do all kinds of favors for weddings for showers for birthday parties and its mostly custom.”
Campos said she definitely thinks of the kids first when it comes to the pastries.
“I love kids and what they like is really what has been so popular,” Campos said. “You do what appeals to them and I think it’s why it’s been so successful.”
She graduated Regis College with a Bachelor’s Degree in Graphic Design, according to the store’s website.
“I just love to draw…It’s been a perfect combination of baking and artwork,” Campos said. “I think that’s kind of how the cookies came to be.”
Getting to design the purple and green store was the most fun, Campos said.
“It appeals to the kids and I’ve gotten a lot of compliments on it,” Campos said. “As a designer, it’s a great project to do. It’s fun.”
