NEW PROVIDENCE, NJ - Bistro Seven. Three. is coming to New Providence.
The popular BYO restaurant based out of Bernardsville is due to open at its Springfield Avenue/South Street location later this April. It will be located where Galileo's restaurant used to call home (the former location of McGrath's Hardware).
Owned by Afrim Berisha, Seven. Three. will bring “well-done comfort food, reasonably priced, in a casual setting.”
“What we’re doing here at Bistro Seven-Three [includes] very good variety on the menu,” Berisha said. “No one in New Providence is doing this type of cuisine. I’ve been to New Providence many times and we want to offer something with very good variety.”
Berisha is no stranger to New Providence. The European restaurateur is the former owner of Aquila, which he sold in 2003.
“I remember the clientele was great, we were busy from day one,” he said. “Now I’m coming back to New Providence with this concept -- Bistro Seven-Three. I believe this is what the town needs, it's good for families. We do plenty of take-out.”
Bistro Seven. Three. is not your typical restaurant. The modern-style menu changes with the seasons because the kitchen staff wants to provide the freshest ingredients available. Menu selections are based on the entire plate, not just the protein of a dish, with each chef having the opportunity to create their own specialties.
“The menu, we get very excited about every season,” Berisha said. “Our chef and myself, how we form the menu is by seasonal ingredients. That’s the main key. Asparagus, leaks, rhubarb, that’s how we’re thinking. We’re not thinking of protein and what goes around it. We’re going to get seasonal items and go from there. That’s how our mindset is for every season.”
Berisha and his staff at Seven. Three. are focused on creating “a neighborhood restaurant.” Don’t be surprised when you walk in for the first time and feel like you're at home, because that’s what the staff wants you to experience.
The “repeat” customer is key to the restaurant's future success.
“We are very personable with our customers,” Berisha said. “That’s one major reason why we have so much repeat clientele. We treat customers when they walk through our doors as if they were coming in our house. We want to treat them that way. We recognize people and treat them like family. We want them to feel that way in the ambiance when they come.”
The front-of-the-house staff at Bistro Seven. Three has mastered the art of restaurant ambiance. Outside of the family-like atmosphere, the combination of all other restaurant variables will make Seven. Three. in New Providence the place to be every night (except when they are closed on Monday nights).
“No. 1 the food, No. 2 the service, No. 3 the atmosphere, all of those together and reasonable prices for the quality, those four key components are what makes us successful, in that order,” Berisha said. “This is the formula we do now and don’t deviate from. This is a must. We can’t operate any other way.”
The new location on South Street in New Providence will have one major difference from its sister restaurant in Bernardsville: the addition of patio seating. This new-aged style of dining will be sure to enlighten the mood at Bistro Seven. Three.
"Outdoor seating, especially in the last ten years, has become very popular,” Berisha said. “We really want to utilize it. It's going to be well-landscaped and kept. It's going to be a little gem in New Providence. No one has the ability to do that except for us."
