LIVINGSTON, NJ - The Simple Greek, an open-kitchen style, Mediterranean-food franchise, just opened its first store in northern New Jersey at 288 Eisenhower Parkway in Livingston on Saturday, Nov. 3.
“I’m so excited to share this chapter of my life with the people of Livingston,” said Keith Baxi, co-owner and manager. “I love Mediterranean food and I find Livingston to be an amazing place. I am thrilled to combine those two loves and bring this fresh and unique concept to my friends, family and community.”

The Simple Greek allows consumers to create-their-own Greek meal, based on their preferences. They start by choosing a salad or pita that will be made right in front of them as they move down the line. Then, they add a variety of fresh meats, veggies, sauces, and spices and top it off with a variety of sides, sweets and drinks.
The Simple Greek capitalizes on the popularity and health benefits of the well-known Mediterranean diet.
The Simple Greek Livingston also chose to donate a portion of the proceeds from the Livingston Grand Opening Day to the Community FoodBank of New Jersey.
