Gluten-Free Brussels sprouts Au Gratin

1 lb. Brussels sprouts

2 Tbsp olive oil

3 medium garlic cloves, minced or pressed through garlic press (about 1 tablespoon)

1 tsp chopped fresh thyme leaves

salt and ground black pepper

1/4 cup white wine

2 tsp juice from 1 lemon

1Tbsp chopped fresh parsley leaves

1 Tbsp of Pecorino Romano cheese

½ cup Gruyere cheese (use more or less depending on taste preference)

½ cup organic cream

½ cup Gluten-free breadcrumbs (see recipe)


Heat pan to a medium heat. Put in oil and garlic. When garlic begins to brown put in brussel sprouts and stir. Add in the thyme, salt/pepper, parsley, and lemon juice. Cook for 5 minutes. Add in white wine and stir.

Preheat oven to 375 degrees. Take sprouts off the heat when they begin to soften.  Place them in an olive oil coated casserole dish. Mix in gluten-free breadcrumbs and Pecorino Romano cheese. Take half of them out and place in a separate bowl. Line Gruyere cheese over the sprouts in the casserole dish. Pour in half of the cream. Pour the rest of the Brussels sprouts into the casserole. Line the top with Gruyere cheese and pour in the rest of the cream. Sprinkle some Pecorino Romano, fresh thyme and parsley over the top for garnish. Bake for 40-45 minutes.


Gluten-free Breadcrumbs

2 slices Udi’s white or multigrain gluten-free bread

1 tsp oregano

1 tsp garlic powder

2 tbsp olive oil

Crumble breadcrumb into a pile. Heat the oil in skillet. Throw in bread, oregano, and garlic powder. Stir until bread begins to crisp.
