BAYONNE, NJ - Bayonne’s offerings got tastier on Tuesday with the grand opening of Paixstries Bakery at 1087 Avenue C.
While owning and operating a business is new to Justine Blandon, the French Culinary Institute trained pastry chef has all the ingredients to make a successful go of it, including the unconditional support of her family, led by her husband Steve, many of whom joined her the ceremonial ribbon cutting.
Asked about her decision to open the bakery outside of her hometown of Jersey City, Blandon told TAPinto Bayonne that space was more affordable, and that the community already “feels like home.”
“People are moving from all over to be in Bayonne,” Blandon said adding that she hopes as foot traffic increases in the warmer months so to will business. With a renovated park right across the street Blandon also looks forward to welcoming parents searching for a cup of coffee and pastry while their children play.
No pastry shop opening would be complete without a few samples of their finest creations and Paixstries didn’t disappoint at the event with bite sizes samples of cheesecake, chocolate mousse, and banana cream pie, among many others! As the clientele grows so will the shop’s offerings, Blandon said, with a variety of sandwiches and paninis being added to the menu. While currently only open on the weekends Blandon is always available for special orders including custom birthday cakes.
On hand with her colleagues on Bayonne’s governing body to wish the new business luck was Council President Sharon Ashe-Nadrowski who said that “it’s always great to welcome a new business to our community.”
The ribbon cutting, she said, “is another sign of Bayonne’s growth.” With a bakery, photography studio, and boutique women’s clothing store all opening their doors in just over a week, Ashe-Nadrowski added, “Bayonne residents truly can shop local and get everything they need.”
