CLARK, NJ — Need a homemade treat for a holiday gathering in a hurry? French silk fudge might be your new go-to recipe. Fudge is a welcome change from the usual yuletide dessert parade of gingerbread, sugar cookie cutouts and fruitcake. And this microwaveable recipe is an easy way to whip up an impressive dessert with minimal fuss.
- 2 cups superfine sugar*
- 1 (5 oz.) can evaporated milk
- 1/2 cup butter
- 3 cups chocolate chips (1 and 1/2 12 oz. bag)
- 2 cups mini marshmallows
- 2 tablespoons vanilla
- 1 cup chopped nuts (optional)
In a 4-quart glass bowl, microwave sugar and evaporated milk 3 minutes; stir. Microwave 3 more minutes. Stir in butter and marshmallows until melted. Add chocolate chips and stir until smooth. Add vanilla and nuts. Mix thoroughly.
Pour mixture into an 9” square pan lined with waxed paper. Chill and cut into pieces.
Makes 2 lbs.
*Do not use granulated or powdered sugar. Superfine sugar is available in grocery stores, but you can easily make your own: Just spin granulated sugar in a food processor until it is the texture of fine sand.
