BELMAR, NJ — While “Kids Baking Championship”contestant Anthony Fontanez made it clear last night that he is a Jersey boy, he came through in the end by creating a dessert that looked just like a New England lobster roll.
“I don’t know how to make anything look like a lobster,” said the 12-year-old Belmar youngster at the beginning of the show’s January 20 episode, “Sammy Whammy,” which featured the remaining 10 contestants baking up dessert imposter sandwiches. “I’m from New Jersey, not New England. This is really confuzzling.”
But Fontanez took on the challenge and did not disappoint. After two hours of preparation, his lobster roll — raspberry cake pop “lobster” and pastry cream mayo stuffed into a pate-a-choux roll — earned him the praises of the judges and the opportunity to advance to the fourth round of the competition.
“I really love how you didn’t make all the lobster red. You really got the white and red that lobster can be,” said judge Valerie Bertinelli, who also was impressed with how his light pastry dough, called pate-a-choux, resembled a lobster roll bun sliced on the top.
“It looks exactly like lobster meat,” judge Duff Goldman chimed in, but adding Fontanez could have used more of it in his sandwich.

The fourth round of the competition will debut on Monday, January 27 with the remaining nine contestants creating llama cupcakes in a chosen flavor.
The contestant who remains standing after 10 elimination rounds of baking challenges will be named Kids Baking Champion, earning $25,000 and a feature in Food Network Magazine.
