Local Chef, Jesse Kraft, was one of ten finalists selected in the USA and Canada for the Sodexo and James Beard Foundation, Recipe of Tomorrow Contest. He is the only finalist in New Jersey. The next step to being named the national winner will depend on the number of votes he receives from his on-line You Tube Video. The voting period is from April 22 through May 5. Ten-thousand chefs from throughout the Sodexo Company were eligible to compete in this prestigious contest. Each individual was required to submit a healthy meal utilizing sustainable ingredients. The dishes were required to include a seafood, local produce and organic items. Mr. Kraft award-winning creation was the following:
Pan Seared Cod Filet served over Shiso Greens with a Spring Beet Vinaigrette served with a Pumpkin Quinoa Risotto Garnished with Micro-Amaranth.
Jesse Kraft is a graduate of The Culinary Institute of America. He has worked in a variety of culinary positions including a private chef, Executive Chef of a high-end catering facility and at Saint Barnabas Medical Center for four years. He recently returned from a 46-country tour throughout Asia, Africa and Europe studying local cultures, environments and farming practices and how they impact daily living. Jesse has a passion for local, sustainable, farming, fishing and purchasing.
