CHATHAM, NJ - Many in Chatham know Jean-Eudes Haeringer for his work as a handyman around town, as well as the set he built for the Chatham Middle School's production of Willy Wonka Jr.
But Haeringer is now adding a new skill that few can claim: Judge for the 2018 World Championship of Artisan Salami Making.
Haeringer, originally from Strasbourg, France, read about the Mondial Rabelais 2018, and set out to become a judge for the event that is set for next month in his native country. Haeringer has been making homemade cured salami and sausage, which he shares with his friends, for years now.
Haeringer said he will attend an instructional gathering in France that will certify him as a qualified salami/sausage judge before the event.
These are the knives Haeringer made using old saw blades, Birdseye maple wood for the handles and brass recycled from his clients' old shower valves to cut the salamis at the competition.

Since my arrival in the USA, I am in search of the tastes of my childhood (Savoie and Alsace) and more particularly with the scents of the origins of the ingredients that I cook; The smell of the farm, the farmer and his peasant, the mountain, the grass, the manure etc. that we find by closing our eyes in a good sausage for example. It's an honor for an animal to be cooked and tasted by me. I like to share it and criticize it.
