EAST BRUNSWICK, NJ - It's week 5, and the corn is here! Great basket of goodies to work with this week as we all continue our adventures in Veggiedom! Here's what I got in my CSA mystery box:
A dozen ears of bi-color corn (just in time for July 4!)
Swiss chard (my new best friend!)
A lovely little multi-colored pepper plant
What to do? What to do? I will grill the corn on Independence Day then slather it with some of the fresh pesto I made with last week's basil. Jersey corn is the best, but I am still waiting for the August corn to just eat plain.
Still using the kale in smoothies and salads and sauteeing the Swiss chard with delicious garlic, Parmesan cheese, and a bit of cream. Am freezing my blueberries for baking later on. String beans Italian style- slow-cooked with oilve oil, garlic, salt and good-quality canned tomatoes. Amazing.
This week my star veggie is the peas, especially in this great traditional recipe. Serve this with a steak or grilled chicken and people will worship you as the deity you are!
Summer is finally here and our local veggies are blooming in the Garden State. This column throws around a few ideas about how to use those farm favorites when they are at their freshest.
