PISCATAWAY, NJ – Peanut Butter Snowballs are fun and easy to make. This delicious treat has become a holiday favorite in our house. Our little one loves to help make them for Santa on Christmas Eve.
We like to use creamy peanut butter, but if you prefer more texture, use chunky peanut butter.
Prep Time: 15 mins. – Cook Time: 15 mins.
Servings: 3 – 4 dozen
2 sticks butter softened
2/3 cup sugar
¼ tsp salt
2/3 cup peanut butter (chunky or smooth)
2½ cups flour
½ cup hot chocolate mix
¾ cup sifted confectioners’ sugar
1. Preheat the oven to 350º. In a large bowl using a hand mixer on medium, beat butter, sugar, and salt until fluffy. Beat in the peanut butter. Add the flour and hot chocolate mix and beat to combine.
2. Scoop and roll into 1-inch balls and place on 2 parchment-lined baking sheets. Bake for about 15 minutes, until bottoms are golden brown. Let cool completely on baking sheets.
3. Place the confectioners’ sugar in a shallow bowl. Roll each cookie in the sugar until well coated.
