HOBOKEN, NJ - If you want to have a polite conversation in Hoboken, there are three topics you tend to avoid—religion, politics and delis. But the folks over at Food & Wine have gone and made their own pronouncements regarding the Best Sandwich in Every State, with Garden State gourmands making moves for the magnificent melty mutz of the Mile Square City.

M&P Biancamano at 1116 Washington Street has been serving Hoboken for years, with Peter Biancamano mastering the mutz (or mozzarella, for the uninitiated) since 1981.

“I keep doing the same thing,” Biancamano told hMAG in a 2016 interview. “I’m not changing anything.”

A specialty of southern Italian cuisine, mozzarella is a type of semi-soft cheese found in basically everything, from pizza to salads to sandwiches. Here in New Jersey, however, what it is NOT, is “maht-zoh-rella.” That’s the kind of cheese you find further inland, on a slice of Papa John’s.

Mutz is crafted from curd, and kneaded by hand to take its semisoft form.

“You feel it in your hands,” says Biancamano. “It’s all about working it. It’s not a trick—it’s just timing.”

Around here, we eat it straight up—or occasionally on a sandwich. According to Food & Wine, Biancamano's fresh mozzarella and pepper sandwich is, "a thing of simple beauty, on some very fine bread—might be one of the country's best sandwiches, period."
