KENILWORTH, NJ - Welcome to Cooking in Kenilworth. Each week TAPintoKenilworth will showcase a new recipe. This week we have Rose DeLuca's Manicotti!


For the crepes
One cup
flour 1 cup water
eight eggs
** Mix these ingredients together using a small frying pan with your choice of a dab of olive oil throughout the pan or an olive oil spray.
(I usually put olive oil on a paper towel and go over the pan.) make sure the pan is hot and pour one tablespoon of this mixture into the pan. Move the pan around to form a thin crêpe. Let it cook for about 30-40 sec flip and cook for about the same amount of time.
Place crêpes on the side to cool.
* 3 lbs ricotta cheese
3 eggs
1/3 cup Parmesan cheese
2 cups of mozzarella cheese (1 1/2 cups in the filling the rest put aside )
Parsley (I usually just eye it)
Mix all ingredients well
Fill crepes with filling
In a baking pan pour about 3-4 tables spoons of your liking of sauce.. gravy whatever you call it 😉 (make sure your baking pan is evenly coated with it)
Lay your manicotti in the baking dish top with more sauce/gravy (I’d say about 1-1 1/2 cups) sprinkle the rest of the mozzarella on top I also add extra Parmesan cheese
Cover Bake at 325 for 30 min
If you like it a little crispy on the ends cover for 20 min uncover for 10 min
Although I have and have given this recipe please be advised ... the Italian in me .. and Italians will understand this when I say 80 percent of my cooking is not done by measurements but done by eye and with love ❤️
