Here is the recipe for the fried zucchini flowers.  I learned to make these watching my mom and dad make them, so I never really wrote down a recipe before.  It's pretty simple, but I tried to put some basic measurements to it and adjust depending on the number of Zucchini Flowers one is making.

For 20 Zucchini Flowers, make the batter by hand-mixing:

1 cup of all-purpose flour

1/4 cup of water

1 teaspoon of salt

2 eggs

1 teaspoon of dry yeast

(the batter is similar in consistency to pancake batter)


Prep the flowers by gently rinsing & drying them.  Remove the flower stamen and stem.

2 oz. fresh mozzarella (cut into strips slightly smaller than the zucchini flower).

Heat pan with plenty of frying oil.

Place 1 piece of mozzarella in each flower.  Put the stuffed zucchini flower through the batter and gently drop in the frying oil.  Fry evenly and both sides.
