Makes 1 Pizza

1 medium-size baked sweet potato (about 1 cup mashed - roasted in a 425-degree oven for 45 minutes, or until tender)

1/2 cup (52 grams) Almond Flour

1 Tbsp Ground Flaxseed, optional

1/2 tsp Italian Seasoning, Dried Oregano or Herbs de Provence

1/4 tsp Turmeric

A few cracks Fresh Black Pepper

1 Roasted Garlic Clove, optional

1/4 - 1/2 tsp Kosher Salt, start with 1/4 tsp then taste + adjust to your liking

Olive Oil, for brushing

Pesto, Sauce, Vegetables, Cheese, for topping

Once the potatoes are cool enough to handle, peel and place in a mixing bowl. Squeeze and mash with your hands, then mix in the remaining ingredients.

Grab the mix in your hands, then begin to flatten into a crust and place on a parchment-lined baking sheet. Continue shaping into a circle with a slight crust around the edges (it should be about 1-inch thick).

Brush lightly with olive oil and bake in 425 degrees F oven for 25-30 minutes, or until a shade darker. Top with sauce and toppings of your choice. Enjoy!
