LIVINGSTON, NJ  - Livingston’s Nero’s Grille has announced that Carmine Spinazzola became its new executive chef at the beginning of October 2011.  Spinazzola will bring fresh ideas and unique specials to Nero’s while keeping the Italian standards and steakhouse menu items that have made Nero’s a favorite for more than 40 years.
Spinazzola was trained at Le Cordon Bleu and began his career at Windows on the World before moving onto Patroon restaurant, in New York City.  For eight years, he was a chef for New Jersey’s Blue Water Group, including stints as executive chef for South City Grill and Fire & Oak.  While at South City Grill, the restaurant was rated “excellent” by Zagat, was named northern New Jersey’s Best Seafood Restaurant by New Jersey Monthly for three years, and received the Food Network’s Viewer’s Choice Award for Seafood. 
 
Born in East Orange and raised in Montville, New Jersey, Spinazzola credits the traditional Italian dishes of his mother and grandmother as early inspirations.  He soon became involved in the family’s decades-old bakery business, which ultimately resulted in his desire to be a chef. 
 

With his extensive working knowledge of all types of seafood, Spinazzola plans to create innovative seafood specials to supplement Nero’s new fall/winter menu.  “I see an opportunity at Nero’s to pair some contemporary takes on seafood with the wonderful classic cuisine already on the menu,” said Spinazzola.  Among these new specials are citrus-crusted tuna; and pan-seared jumbo scallops with sweet potato puree, braised bacon cabbage, and a cider jus.
 
Nero’s Grille is open for lunch Monday through Friday, from 11:30 a.m. to 2:30 p.m.  Dinner is served Monday though Thursday, from 5 to 10 p.m.; Friday and Saturday, from 5 to 11 p.m.; and Sunday, from 4:30 to 9:30 p.m.  The extensive hours, exceptional cuisine and service, and award-winning wine list have made Nero’s the “in spot” for area residents, business diners, family celebrations and other occasions.
