MADISON, NJ—David Reyes owns a gem in the heart of Madison. His restaurant, David’s Rumba Café, is the first and only Salvadoran establishment in town and is known for its authentic dishes and fresh ingredients.

For the fifth year, Reyes will take part in the in the annual Taste of Madison, which brings together the best of Madison’s dining scene at the Park Avenue Club in Florham Park. On Monday, April 7, alongside the Napa Valley Vitners, Reyes and other local chefs will provide small plates of their signature dishes.

“The Taste of Madison is really good for a small business. It’s exciting to see so many new people trying our food,” says Reyes, who reports a boost in new business in the months following the Taste.

David’s Rumba Café celebrates its six-year anniversary on May 1. “We have been growing and trying new things every year. We started with the idea of a fast-food restaurant, but it’s become more of a sit-down restaurant. And the reaction to our food is good.”

Though many mistake his establishment for a Mexican restaurant, Reyes doesn’t mind too much. “Our food is more from central and southern America, but I just want people to know we offer the best of everything that’s good about Latin food,” he said. Salsa, chips and guacamole are homemade daily and the fish is fresh.

David’s offers the staples of Latin cuisine like fajitas and tacos, but also spices it up with daily specials. Sometimes the specials are so popular that Reyes keeps them on the menu. “We get things people know and add Latin ingredients,” Reyes said.

Great specials diners have enjoyed recently include: Guachinango Veracruz-- a pan-seared red snapper with cayenne, lime juice, mango and onions over black beans and rice; Fricase de Costilla--- cut pork ribs slowly cooked in tomato sauce with yucca, potatoes and bell peppers; and pan-fried scallops with crabmeat flakes, scallions, garlic, cilantro, lime juice and mango.

The café sees a large lunchtime crowd that includes Madison employees. In the evenings, locals shuffle in with bottles of wine and sangria. Sunday is a big day for family dining.

“I love this town. Everyone knows and helps each other. I’ve been very lucky,” Reyes said.

For the Taste, Reyes plans to keep it simple with chicken and beef fajitas-- and all the fixings.

Tickets to the Taste are available at at Gary’s Wine & Marketplace at 121 Main Street and at locations in Wayne and Bernardsville.  D torr boutique at 36 Main Street, Sprouts Consignment at 250 Main Street, and The Madison Pharmacy at 66 Main Street are also selling tickets. Tickets will not be sold at the door.

VIP Admission at $100.00 permits entry an hour early at 6:00 p.m. General Admission at $65.00 permits entry at 7:00 p.m. The event ends at 9:30 p.m. All guests must be 21 years of age or older. Valet parking will be available.

The following items will be available for bid at the Taste's silent auction: A private box of thirty baseball game seats courtesy of the Somerset Patriots; New York Giants boxes tickets to a 2014 game courtesy of Quest Diagnostics; A Sonos surround system courtesy of PC Problems. More fabulous items are being donated to the silent auction every day.
