A Flavorful Thanksgiving Vegetarian Choice & More

Roasted Acorn Squash Credits: May Fridel

SPRINGFIELD, NJ - Enjoy a vegetarian option for your thanksgiving feast, compliments of Passion for Spices. This recipe is credited to the Indian Cuisine: Diabetes Cookbook authored by May Fridel and published by the American Diabetes Association.

Roasted Acorn Squash with Farro Tahiri

Tahiri is a traditional Indian one-pot meal from the Uttar Pradesh in northern India. It is aromatic, rice based, and usually prepared using a cooking method called dum. Farro is a whole grain with a complex nutty taste. It looks similar to a grain of brown rice. The Italian word farro is derived from the latin word for “wheat.”

Serves: 10 - Serving Size: ½ cups - Prep Time: 5 mins - Cooking Time: 1 hour 10 mins

Calories: 240 -  Calories from Fat: 30 - Total Fat: 3.5 g - Saturated Fat: 0.4 g -  Trans Fat: 0.0 g - Cholesterol: 0 mg - Sodium: 400 mg - Potassium:  540 mg - Total Carbohydrate: 45 g - Dietary Fiber: 8 g - Sugars: 5 g - Protein: 7 g - Phosphorus: 225 mg

1 Tbsp & 1 tsp sunflower oil, divided

1 ½ tsp salt

1 tsp ground black pepper*

2 - 3 sweet potatoes, peeled and cut into ½-inch cubes

2 red onions thinly sliced

1 tbsp ginger-garlic paste

2 medium tomatoes, diced

1 green chilli, slit open with seeds removed

1 tsp cayenne pepper*

1 tsp ground coriander*

½ tsp ground turmeric*

2 cups farro, rinsed and drained

2 cups warm water

2 cups low-sodium vegetable stock

3 Tbsp finely chopped cilantro leaves

1 Tbsp finely chopped mint leaves

½ Tbsp lemon juice

*These spices can be replaced by 1 Tbsp Keralan Curry Spice blend

1.    Preheat oven to 375F and position an oven rack in the center.

2.    In a large bowl, combine 1 tsp oil, ¼ tsp salt, black pepper, and sweet potatoes. Toss until well combined. Transfer mixture onto a rimmed baking sheet, spreading evenly. Roast potatoes for about 30 minutes or until fork tender, stirring every 15 minutes. Remove from oven and set aside.

3.    Preheat a Dutch oven over medium-high heat and add remaining 1 Tbsp oil. Add onions and ¼ tsp salt and saute until onions become golden, about 3 minutes.

4.    Reduce the heat to medium. Add ginger-garlic paste and saute for about 2 minutes. Add tomatoes and saute for another 2 minutes. Add chili, cayenne, coriander, and turmeric and saute for 1 minute.

5.    Add farro and remaining 1 tsp salt and saute for 1 minute. Then add water and vegetable stock and bring to a boil over medium-high heat. Once liquid is boiling, cover the dutch oven and very carefully cover the lid with aluminum foil to prevent steam from escaping. Reduce heat to low and cook for another 30 minutes.

6.    Remove lid and add roasted sweet potatoes, cilantro, mint, and lemon juice. Remove green chili. Fluff the farro.

Roasting the Acorn Squash

2 acorn squashes, halved and seeds removed

2 Tbsp extra-virgin olive oil
1 cup (6 oz./185 g) farro Tahiri
1 tsp ground black pepper
2 Tbsp pomegranate seeds

1.    Preheat an oven to 400°F (200°C).

2.    Drizzle the cut sides of the acorn squash halves with the olive oil and season with salt and pepper. Arrange the squash halves cut side up on a baking sheet and roast until tender, about 45 minutes.

3.    Fill the roasted Acorn Squash with the prepared Farro Tahiri.

4.    Garnish with pomegranate seeds.
