MONTCLAIR, NJ (July 20, 2016) – Bryan Gregg, Chef and Owner of Escape Montclair and a leader in the New Jersey local food movement, today announced he will welcome Chef Todd Villani, chef/owner of recently-closed Terre à Terre in Carlstadt, at Escape four consecutive Saturdays in July and August. On July 23rd, July 30th and August 13th, Chef Villani will be the driving force behind the New Jersey-centric Escape menu with a few Terre à Terre-inspired specials. On August 6th, Chef Villani will bring back the award-winning dishes of Terre à Terre for a one-night pop up evening at Escape.
“I have cooked alongside Chef Villani on several occasions and we share the same local ingredients-driven food mentality that I know my Escape clients will enjoy”, says Chef Bryan Gregg. “I’m looking forward to doing my own pop up kitchen at Toast Asbury Park the evenings of July 22-23, July 29-30, August 5-6 and August 12-13 while Todd cooks at Escape”, continues Gregg.
Chef Villani’s menu for the August 6th Terre à Terre-inspired pop up evening at Escape will feature:
Smokey Lump Crab Croquettes - shaved fennel root, carrot and radish salad, nuts and berries, chipotle aioli
Artichoke Hearts - charred green onion remoulade
Tricolor Raw & Roasted Beet Salad - lettuces, spiced almonds, whipped peppercorn goat cheese
Maine Mussels - garlic, shallot, white wine, herb butter and crusty bread
Pulled Pork Spring Roll - lemongrass, ginger, basil, peanuts, reduced sweet soy
Gremolata Pork Tenderloin - charred corn, mushroom and bacon “barlotto”, smoked ginger- blackberry compote
TAT Steak Preparation of the Moment - roasted garlic and basil potatoes, rapini, fried egg, French onion jus
Slow Braised Short Rib - burnt butter sweet potato puree, summer greens, cherry cola reduction
Barnegat Sea Scallops - cress, peas, red quinoa, shellfish sauce
Crispy Skin Chicken Breast - vanilla poached summer veg, waffle, roasted lemon, rosemary, honey
Roasted Peach & Lavender Bread Pudding
