Mini recipes, those with five ingredients or less, are always the best because they are so simple and usually cost a lot less than the pre-made versions available at the market. 

This balsamic vinaigrette has just four ingredients (salt and pepper don't count) and gets a really thick creamy texture if made in a high speed blender or even with an immersion blender. 

Ingredients:

4 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

1 clove garlic , crushed or finely chopped 

3/4 cup really good extra virgin olive oil 

Salt and freshly ground pepper , to taste


Method:

Combine the balsamic vinegar, mustard and garlic in a blender or food processor. With the machine running, gradually add the olive oil through the opening in the lid to process into a thick dressing. Season with salt and pepper. 

I've made the dressing using an immersion blender which produced an almost mayonnaise-like consistency as a great deal of air was whipped into the dressing.
