Whether its weekend or weekday morning, pancakes are always welcome. There's just something about this childhood favorite that makes you feel the warm and fuzzy all year round.

My Oatmeal Cookie Protein Pancake recipe is no exception and comes straight out of our Glow: Plant Based Snacking Made Simple e-book.

In general, cooking and baking is considered a self care strategy that can alleviate stress, anxiety and allow your creative side to shine through.

Ingredients:

1 scoop vanilla protein powder

½ cup gluten-free oats

3 egg whites or 1 whole egg

2 tsp. baking powder

1/3 cup almond milk

1/4 tsp cinnamon

Pinch of sea salt

1 tsp vanilla extract

1 Tbsp maple syrup (or honey)

Blueberries (optional)

 

Directions:

1. Combine all ingredients and blend together in a blender (I always use my Nutribullet!)

2. Pour ¼ cup at a time onto warm griddle or skillet on medium heat.

3. Flip occasionally until the edges brown.

3. Top with sliced bananas, nuts or unsweetened coconut!
