NEW PROVIDENCE, NJ - Dim Sum Villa Cantonese Restaurant presents Chinese cuisine in its purest form.

Located at 1260 Springfield Ave., New Providence, Dim Sum uses only fresh ingredients in all of its dishes. Dim Sum Villa features a full Cantonese menu and Hong Kong Style dim sum menu. Specialties include an eclectic menu of Cantonese Cuisine with an array of seafood, dim sum and the acclaimed XO sauce made with a secret recipe.

Philosophy
The philosophy is closely followed by the kitchen staff that enhances the flavor of fresh seafood, meats, and seasonal vegetables through traditional preparation and cooking methods.  The core of the staff comes to Dim Sum Villa from Dynasty, a popular Cantonese dim sum restaurant located on Route 22 West in Green Brook, that opened in 1997.

The owner of Dim Sum Villa, Emily Kei, is the daughter of Timothy, who owned and operated Dynasty. For many years, Emily worked with her father at Dynasty. After Timothy retired and closed Dynasty, Emily said, “I missed the guests, the interaction with the customers.” So, in 2013, the current space in New Providence became available, and, with her father's guidance, she committed to opening Dim Sum Villa in New Providence. 

She spent more than six months renovating the restaurant and redesigning the kitchen in accordance with dim sum preparation. Traditional Cantonese fare is available as well.

“My goal is to provide a wonderful dining experience for the family,” said owner Kei.  “We want to be the family ‘go to’ restaurant.” Both Emily and her father Timothy bring a wealth of knowledge of dim sum and managing and running a successful restaurant to Dim Sum Villa in New Providence.  

What is Dim Sum?  
Dim Sum is a collection of many varieties of appetizers, snacks, and pastries, handmade with many different kinds of ingredients including meats, seafood, and vegetables. It is prepared in ways like steamed, stewed, baked, pan fried, boiled and braised. The origination of Dim Sum is in Southern China during the 10th Century. As more people are introduced to this tradition, they’ve grown accustomed to not only enjoy Dim Sum as a staple for brunch, but also as a gathering.

The Dim Sum Villa Experience
All-day Hong Kong Style dim sum offering features favorites ranging from steamed crystal shrimp dumplings to baked buns with honey roast pork, sticky rice in lotus leaf or shui mai and sesame balls enriched with homemade sweet taro paste. 

On weekends at lunch, Dim Sum Villa offers table-side dim sum cart service.  Diners can see dim sum selections and enjoy a little of this, a little of that, off the dim sum carts.

“My goal is to provide a dining experience for the family," Kei said. "We want to be the place area residents and families can go for healthy and delicious dining options.”

The restaurant has space for parties, meetings, book group sessions and other gatherings.
