NUTLEY, NJ - We've all been there, we go to bed on Wednesday night thinking this is going to be the smoothest Thanksgiving ever, only to wake on Thursday morning with the "we don't have enough food" panic. A bunch of TAPinto editors got together and figured out an easy solution: an extra side dish.
In an unscientific twitter survey, "stuffing" got more votes as a Thanksgiving favorite than mashed potatoes and cranberry sauce. But we just woke up, in a panic, so what's the answer? Semi-homemade stuffing.
It seems every family in America has a box of StoveTop stuffing in the pantry. Their recipe is simple and stress free, water, butter, and the contents of the box, but this is Thanksgiving and people expect homemade. Several TAPinto Editors offered their ideas for taking the ordinary box of StoveTop and making it your own with ingredients you have around the house.
Kathy Lloyd of TAPinto Roselle and TAPinto Elizabeth would add diced celery, onion, fennel and sage sausage.
Elena Knopp of TAPinto Newark said "We make two! One we saute onions and celery in butter, then we add chicken stock and golden raisins and allow them to plump. The other stuffing is Italian sausage, stewed tomatoes and garlic. Happy Thanksgiving!"
Brend Becker Nemcek of TAPinto Warren and TAPinto North Plainfield/Green Brook/Watchung makes two variations of her stuffing from scratch, - "one has ground beef, sausage, porcini mushrooms and hot peppers, the other one has figs, cranberries caramelized pecans and a touch of orange zest.... and to mix it up more I use many kinds of bread including bagels."
John Lee of TAPinto Bloomfield includes chopped dried apricots, pignoli, and fennel.
Tim LeCras has a friend who uses the soft pretzels from WaWa as the base and "apparently it comes out great."
Jacqueline Ross Lieberman of TAPinto Westfield suggests replacing some of the liquid with wine.
