Mexi-Flip Taco Tuesday at Essex Junction in Bloomfield Center

Taco Tuesday returns to Essex Juntion in Bloomfield Center as the Mex-Flip taco truck takes over the kitchen from 5 p.m. to 2 a.m. 

Taco Tuesday at Essex Junction marks the collaboration of two businesses in Bloomfield Center. "Our ambition inspired this collaboration in the things that I do," Salinas told TAPinto Bloomfield. "We do things for a purpose, that's serving our guests the best way we know how, with delicious food." 

'Since the closing of Senorita's, there has been an obvious need for Mexican food here," said Goldberg. Last Tuesday was the first collaboration so the two local business leaders are doing it again. 

Mike Salinas told TAPinto Bloomfield that he has been a fan of Jeremy since we both understand what it is like to be in the food world even thought they come from different spectrums: Essex Junction is bricks and mortar while Mexi-Flip is a kitchen on wheels.

I have no doubt there is a space shortage, no doubt something needs to be done and no doubt the Board has done their due diligence. However I respectfully believe that we can do better than this plan. The cost here far outweighs the benefits.
