NUTLEY, NJ - The cranberry sauce made by Nutley High School Culinary students was the most talked about subject at the annual Nutley Chamber of Commerce meeting. Students share their recipe so you can put some Raiders excellence on your Thanksgiving table.
Students enrolled in the culinary programs at Nutley High School spent time this week preparing this "Thanksgiving must" from scratch. Despite the fact that they were making an afternoon dinner for well over 100 people, the students broke down their large recipe to family sized proportions. The recipe is simple and is made with ingredients that are probably already in your kitchen.
Nutley Raiders Ginger-Spiced Cranberry Sauce Recipe
2 Apples diced
2 cups cranberries
2/3 cup orange juice
1 tablespoon fresh ginger, minced
1 cup sugar
1/2 teaspoon cinnamon
In a small saucepan combine cranberries, apples, ginger, orange juice, sugar and cinnamon. Bring to a boil, reduce heat to simmering and cook until cranberries are tender, stirring frequently, whisking, until sauce thickens and remove from the heat.
As the sauce cools, it will thicken even more. The pectin in the cranberries and apples cause the thickening.
The students pointed out that they go through the berries before doing anything else to sort out any stems that may still be attached to some berries. They also discard the smashed/damaged berries. Don't throw out the "discards," put them out of the birds so they can feast while you're preparing your feast.
The students made this recipe for the crowd at chamber in just under an hour. The new block scheduling at Nutley High School allows the students to maximize their instruction / kitchen time, while having enough time at the end of class to clean up and even set things up for the next class. Under the new system, classes are an hour long.
