MIDDLESEX COUNTY, NJ - Chef Ravi is tackling eggplant this time, a vegetable that is just now in season in Central New Jersey.  Here is a recipe that forgoes lots of breading and red sauce and relies on the delicious taste derived from roasting and sauteing summer veggies.

Like our moms and grandmas, Chef Ravi first salts both sides of sliced eggplant to draw the water out. (My mom used to call it "drawing the poison out!")  Salting softens the vegetable, creating a creamier final dish.
