Molasses Cookies by Debbie Mikijanic
- ¾ c margarine, softened
- ½ teaspoon salt
- 1 cup white sugar
- 1 teaspoon ground cinnamon
- 1 egg
- ½ teaspoon ground cloves
- ¼ cup molasses ½ ground ginger
- 2 ¼ cups all-purpose flour
- 2 teaspoons baking soda
- ½ cup white sugar for rolling
In a medium bowl, mix the margarine, 1 c sugar and egg until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon, cloves, and ginger. Blend dry ingredients with the molasses mixture. Cover and refrigerate for at least 1 hour.
Preheat oven to 375°. Roll dough into 1” to 1 ½ “ balls and roll them in the remaining sugar. Place cookies 2” apart on parchment covered baking sheets.
Bake for 10 to 15 minutes until tops are cracked. Cool on wire racks. Store in a tight, covered container to keep moist.
