Team From 'The Roselle' Prepares Delicacies for Fundraising Event


ALEXANDRIA, NJ - Cranford Resident and Roselle business owner Jaull Loram gathered together a team of culinary enthusiasts to participate in the “Riding with Heart” fundraiser.

The Farm to Stable Fundraising Feast consisted of small plates to showcase New Jerseys summer crops, a silent auction and artwork sale.

Loram, the owner of The Roselle, was joined by Doreen Rinaldo, radiation therapist and amateur chef. Rinaldo has been cooking since the age of 12 for family and friends. Her passion is BBQ and smoking ribs, pastrami, brisket and pulled pork.

To prepare for the event, Loram and Rinaldo brined brisket for seven days, seasoned it with a dry rub and smoked it for 10 hours with hickory and cherry woods. Loram created artisanal rye waffles with his professional waffle irons which were then topped by the smoked brisket pastrami and finished with a fresh fennel slaw and stone ground mustard aioli. 

More than 120 guests were delighted by the results and also enjoyed dishes prepared by celebrity Chef Ian Knauer, Jennifer Scher of Poppy Hill NYC, Bobolink Dairy and Bakehouse, Shamrock Catering of Somerville and Ben Walmer of the Highlands Dinner Club. 

Rinaldo stated, “This was a great opportunity to represent The Roselle which will open in 2015. The Roselle will be a destination spot and bring great food, culture and fun to the community. We were delighted to help “Riding with Heart,” an organization that provides such a worthy venue for youth and adults in need while working shoulder to shoulder with such amazing chefs was a memorable experience.”

The mission of Riding with Heart is to improve the quality of life of physically and cognitively challenged adults, children and their families to provide youth development through their diversified equine assisted programs. One 12-year-old rider, Bryan, has been riding since age 4. Bryan is wheelchair bound and hopes to one day “Jump with the horse.”According to his mother, this was the first time for him to ride in the “Big Ring” and he was very excited. Riding with Heart also gives horses that are retiring a renewed purpose. They are in need of a new roof for their stable and the funds from this event will help to make this a reality.
