SCOTCH PLAINS, NJ -- On Thursday, May 13 at 7:30 pm, the Scotch Plains Public Library’s ever-growing Cookbook Club will meet virtually to explore make-ahead meals, big batch and freeze cooking, and other meal prep methods that make it easier to prepare home-cooked meals on a regular basis.  Take the stress out of getting food on the table on your busiest days. Try a meal prep recipe and then join the club via Zoom to share your experiences and hear about what worked (or didn’t).

Later in the month, on Wednesday, May 26 at 7 pm, join Dr. Karen Ensle, RDN, Family & Community Health Sciences Educator and Department Head at Rutgers Cooperative Extension of Union County for “Nine Staples of the Mediterrean Diet.” Learn about the number one dietary plan for good health and wellness in the United States and around the world. 

Eating a Mediterranean diet may lower your risk up to 30 % for a heart attack, stroke, or death according to a highly publicized study done in Spain and published in The New England Journal of Medicine. Help your heart and overall health by adding key staple foods to your daily meals. The Mediterranean Diet was listed again as the # 1 dietary plan by US News and World Report in 2020.
