On Thursday, February 14 at 7pm the South Plainfield Public Library will welcome Susan Rose who will present “Rev Up Your Life with Plant Based Superfoods.”  A vegetarian diet that is high in plant-based whole foods has many health benefits including more energy and increased stamina. She’ll cover basic nutrition needs and how to add more nutrient dense foods to your daily menu.  Handouts will include recipes. There will even be a short meditation sitting at the end! Susan has been a vegetarian and meditating for over 40 years.  She has been cooking and studying nutrition with an emphasis on plant-based whole foods and recently completed a course in Plant Based Nutrition from E-Cornell and the T. Colin Campbell Center for Nutrition Studies. She enjoys cooking for family and friends and creating recipes that are quick and easy to make.  Since retiring from a senior executive position in Sales & Marketing from Blue Cross/Blue Shield, she has conducted numerous talks and workshops around the world on the vegetarian lifestyle and is co-editor of a cookbook called Veggies & You. She will share information on how a plant based diet is healthy, gentle to the planet, and how it can enhance our spiritual development.
