NUTLEY, NJ - The "media" may have many around the country believing that Nutley's greatest gift to Thanksgiving is Martha Stewart, but locals know its "Nutley Raiders Ginger-Spiced Cranberry Sauce." First created by students in the culinary program at Nutley High School in 2017, this dish has become a local favorite, given the reach of TAPinto, its popularity may soon rival Martha's! 

TAPinto Nutley first tasted this sauce at the 2017 Nutley Chamber of Commerce Thanksgiving luncheon . Students enrolled in the culinary programs at Nutley High School spent time in the days before the Chamber luncheon creating dinner classics and this "Thanksgiving must" from scratch. Despite the fact that they were making an afternoon dinner for well over 100 people, the students broke down their large recipe to family sized proportions just for us.

The recipe is simple, made with ingredients that are probably already in your kitchen.

Nutley Raiders Ginger-Spiced Cranberry Sauce Recipe

2 Apples diced (Granny Smith is best)

2 cups cranberries

2/3 cup orange juice

1 tablespoon fresh ginger, minced

1 cup sugar

1/2 teaspoon cinnamon

In a small saucepan combine cranberries, apples, ginger, orange juice, sugar and cinnamon. Bring to a boil, reduce heat to simmering and cook until cranberries are tender, stirring frequently, whisking, until sauce thickens and remove from the heat.

As the sauce cools, it will thicken even more. The pectin in the cranberries and apples cause the thickening. 

The students pointed out that they go through the berries before doing anything else to sort out any stems that may still be attached to some berries. They also discard the smashed/damaged berries. The students made this recipe for the crowd at chamber in just under an hour. 

The Nutley High School Football teams are "The Raiders," hence the name Raiders' Ginger-Spiced Cranberry Sauce. For the 2020 season, the Nutley Raiders Football team won every game.
