Thanksgiving Dinner Recipe
Appetizer - Butternut Squash Soup topped with Curried Pop Corn
Entree - Golden Turkey roasted with Aromatic Spices
1) Cranberry and Apple Chutney
2) Small white potatoes with Rosemary and Garlic
3) Spiced Pumpkin Cheddar Muffins
Dessert - Pie of your Choice dusted with Garam Masala
The Cranberry and Apple Chutney Recipe
3 cups fresh cranberries
2 granny smith apples, peeled, cored and cut into small dice
3 cups water
½ cup lime juice
1 cup onion cut into small dice
2 cups dried cranberries
1 tablespoon minced garlic
1 cup light brown sugar
¼ cup grated fresh ginger
1 cup sugar
2 tablespoons mustard seeds
1 tablespoon salt
1½ cups white vinegar
1 teaspoon crushed red pepper (optional for extra kick)
1 tablespoon Keralan Curry Spice Blend
Place all ingredients in a heavy bottomed pot.
Place pot on the stove on high flame.
Bring it to a boil.
Reduce to a high simmer and simmer until the apples are cooked and the chutney is reduced, stirring occasionally.
