This spring’s warm weather is perfect for celebrating Mother’s Day by making tasty food and enjoying with family. I am sure your mom will appreciate a thoughtful dinner set outside with a seasonal menu with exciting flavors.
Mother’s Day Starter: Peppery Kerala Shrimp with Curried Mayo
1 lb. raw shrimp, cleaned and deveined
2 tbsp sunflower oil
1 lemon cut into wedges
1 tbsp Keralan Curry
1 tsp garlic paste
1 sprig curry leaves (optional)
½ tsp salt
1 tsp ground black pepper
Curried Mayo Dip:
¼ cup sunflower oil
1 tsp Keralan Curry
½ lemon ¼ tsp salt
1 tsp Dijon mustard
In a medium bowl, combine marinade ingredients. Add shrimp, mix well, and marinate in the refrigerator for 30 minutes. Discard curry leaf sprig after marinating.
- Heat oil in a large cast iron frying pan over medium heat.
- Add shrimp and fry for 2 minutes. Turn shrimp and cook another minute.
- Serve shrimp with lemon wedges so juice can be squeezed over top.
Mother’s Day Cocktail: Ginger Pomegranate Spritz
Serves 8 – 10 people
8oz. Vodka or Gin
1 cup of water
2 inches of Whole Ginger
1 cup of evaporated cane sugar
4 limes, juiced
1 lime cut into ½ inch rings
1 quart of sparkling mineral water
1 quart of pomegranate juice (like POM)
1 bunch of fresh mint leaves
2 cups of crushed ice
Ginger Infused Simple Syrup:
Take a heavy bottom saucepan, add the sugar and the water along with the whole ginger mashed up. Heat over medium heat until the sugar dissolves. Let it cool for 2 hours to infuse the ginger flavor.
- In a pitcher, add the mint leaves to crushed ice and a few slices of lime.
- Strain the simple syrup and add it to the pitcher and mix well.
- Add the pomegranate juice and the lime juice and mix it well.
- Top it with the sparkling mineral water.
- Pour over a lime ring.
You can replace the pomegranate juice with mango juice.
