WATCHUNG, NJ - The Watchung Parent Teacher Organization, PTO, announced the return of its Food Truck Fridays, kicking off on Friday, April 9 at Bayberry School, 131 Bayberry Lane in Watchung, from 4: to 8 pm. This outdoor food event debuted in August 2020 when it brought the Watchung community together during the early months of the pandemic while supporting a PTO fundraiser.
Food Truck Fridays (FTF) is a community engagement effort being coordinated by the Watchung PTO to raise funds to support students and their families attending district schools. The PTO began this fundraising effort before the opening of the 2020-2021 school year targeted specifically at generating funds for COVID-related supplies needed at district schools, Bayberry, and Valley View Schools.
“We are delighted to roll out another season of Food Truck Fridays in Watchung. I was thrilled last summer to see residents connecting on the blacktop while in the midst of a pandemic and how this local fundraiser evolved into such a vibrant community “must attend” weekly event for all ages. We are looking forward to welcoming new and returning food trucks to the Borough in the weeks and months to follow and for everyone to enjoy, re-connect safely and dine out to support the efforts of the Watchung PTO,” noted Daryl Eisenberg Knegten, the Watchung PTO President.
Last year, residents enjoyed nearly four months of diverse food truck dining featuring cuisines from a revolving list of Garden State vendors.
This fundraising initiative commences on April 9, 2021, rain or shine, from 4to 8:pm in the rear parking lot of the Bayberry School with operations slated to run through November 2021. Each week, two dinner entree-based trucks alongside one dessert truck will be parked and ready to sell their local specialties to area residents. Food trucks will donate a percentage of their proceeds from the evening back to the Watchung PTO. All food purchased is for take-out purposes with participants requested to follow COVID guidelines, wear a mask and observe social distancing. Parking is available on-site at the school.
Vendors secured for the April 9 kickoff include newcomer Cousins Maine Lobster serving up lobster in every possible variation from the classic roll to lobster quesadilla to lobster taco. They will be joined by fellow Jersey City food truck, Taxi Cab Burgers, who grills made-to-order all-beef sliders served on Hawaiian sweet rolls. Complimenting these two dinner trucks is Cupcake Carnivale, serving their artisan, gourmet cupcakes. Friday, April 16 food truck vendors will feature Angry Archies, a family-owned and operated vendor, selling their signature dishes such as crab cake, lobster rolls, crab poutine, and chicken sandwiches. Oink and Moo BBQ, a local establishment in Somerville, NJ, will be serving their smoked meats sliders, chili, cornbread, and ribs alongside artisanal sauces and toppings. On the dessert front, Donut Evolution will make its first appearance offering hand-crafted, made-to-order gourmet donuts in dozens of decadent flavors.
